I cannot seem to find the setting that I can use to change the font in eMails
I send... and not have to change it by clicking on the font drop-down list.
I want it to automatically start out with the font I choose.

We are to guess as to which e-mail client you use? Might it be
Microsoft's webmail client? Well, you get what they chose to give you.
There is no user-configurable setting to specify a default font. If you
want more control over the content of your e-mails, don't use someone's
fixed design in a webmail client and move to a local e-mail client.
